SSC and installation with Terminal Services?

uninstall the Terminal Server from Windows 2003. They only have one
server permanently on so it makes sense to install on that server.
Now I want 1 person to be able to log into the server remotely and
probably using Remote Desktop or Terminal services just to change
settings and generally make minor updates add users etc.....
If not then there will be alot of travelling on my behalf and I think
its unnecessary.
Can I install Terminal Server back on the machine or can I use Remote
Desktop for the job or can I use VNC?
Any ideas gratefully received.
